Russian dressing is a piquant American salad dressing consisting of mayonnaise , ketchup , and other ingredients.

Russian dressing is similar to Thousand Island . Some manufactured versions omit the mayonnaise and are clear rather than creamy, more similar to French or Catalina. [1]

Russian dressing is mentioned as early as 1900 in U.S. sources. [2] It is also documented in a 1910 catering book as an alternative to vinaigrette for dressing tomatoes or asparagus . [3] A 1913 cookbook has a recipe which is a vinaigrette with paprika and mustard. [4] A mayonnaise-based recipe is documented in 1914. [5] The condiment came to be called "Russian" since the original recipe included caviar , a staple of Russian cuisine. [6]

Local historians claim that the mayonnaise-based version was invented in Nashua, New Hampshire , by James E. Colburn in the 1910s. [7] A 1927 biographical article calls him "the originator and first producer of that delectable condiment known as Russian salad dressing". [8] Colburn had been selling "Colburn's Mayonnaise salad dressing" at his store since at least 1910. [9]

To have conferred upon the epicurean tastes of a great body of people a delicacy at once as refined as it is permanent in its popularity is not to have lived in vain; rather it is to have added to the joy of living. ... [Colburn] hit upon an assembly of ingredients, which he named Russian salad dressing, ... [and earned] wealth on which he was enabled to retire. ... As he rests on his laurels, he is conscious of having done his part well in conferring a blessing upon the people who have learned the art of eating well.
By 1914, Colburn's company was manufacturing it, [10] and distributing it to retailers and hotels. He earned enough from its sale that he retired in 1924. [8]

Typically piquant , it is today characteristically made of a blend of mayonnaise and ketchup complemented with such additional ingredients as horseradish , pimentos , chives , mustard, and spices . [11] [12] [13]

Besides being used as a salad dressing, Russian dressing is also used as a spread for Reuben sandwiches .

Russian dressing has largely been supplanted by Thousand Island dressing , which is sweeter and less spicy than Russian. [8]

Other combinations of mayonnaise and ketchup, but without the spicy ingredients, are known as fry sauce or other names , and typically served with French fries or tostones .

Tartar sauce has the piquant ingredients of Russian dressing, without the ketchup. It is typically served with fried fish.

Marie Rose sauce is similar to Russian dressing, but with different piquant ingredients. It is typically served with seafood.

A variant known as red Russian dressing is very much like Catalina or French dressing . [14]

In Germany , a similar salad dressing is called "American dressing". [15] [16]

¼ cup ketchup-style chili sauce or ketchup
4 teaspoons bottled (regular; not packed in beet juice) horseradish, or to taste

Russian dressing and Thousand Island dressing are often confused because both begin with a base of mayonnaise and ketchup or ketchup-style chili sauce, which results in a pink salad dressing. But where Thousand Island is a bit sweet and studded with pickle relish, Russian dressing is on the spicier side, with a hint of heat from horseradish and hot sauce. In a mortar and pestle, mash the onion to create a paste, or use a large heavy knife to mince and mash the onion into a paste. Transfer the onion paste to a small bowl and whisk in the mayonnaise, chili sauce, horseradish, hot sauce, Worcestershire sauce, and sweet paprika. Season with fine sea salt, if desired. DO AHEAD: The dressing can be prepared ahead and refrigerated, in an airtight container, up to 2 weeks.

Best EVER salad dressing and reuben sauce. I skipped the onion and salt. Sub'd pickapeppa for worchestshire ( to stay vegan). Also used vegan mayo. Added extra horseradish. So yummy.
Excellent base recipe with plenty of room to jazz it up.
Great recipe and wonderful flavor. I used Trader Joe's calabrian chili sauce, and it has a nice kick. This is now our go-to recipe.
I have made this a few times for our Corned beef sandwiches. Today i swapped minced Calabrian chilies for the hot sauce, and smoked paprika for the sweet. Everyone liked the results!
This is a top-notch dressing. Not super-sweet, like many commercial attempts. This is spicy, rich and creamy, with just enough sweetness. I did use my own mayo (Alton Brown's party mayo... it's a little spicy), and my own fermented ketchup, which is more like a chili sauce. Please use a canned chili sauce and not ketchup... it will be too sweet with ketchup.
perfect and easy....don't like horseradish, which I don't keep...but imagine it would enhance the flavors!!! unnoticeably un horseradadish-ly
Super easy and great tasting recipe! I used this recipe for the Russian dressing to be used in making a late snack corned beef sandwich and my wife said it tasted great. I even scaled down the ingredients by eye as I only needed enough for two sandwiches and it tasted awesome. Thanks for sharing.

Wow! This is absolutely delicious! I made exactly as directed with store bought mayo, but homemade ketchup (less sweet and no chili). I wanted to eat it right off the spoon. Makes a great sauce for sandwiches. I make a "Rachel" sandwich - like the Reuben, but with turkey instead.
I made this just as written. It was fabulous on a Reuben Sandwich! This recipe is a keeper!
Made it with dried chopped onion and Trader Joe's seafood cocktail sauce in place of ketchup and horse radish. Wonderful !

Russengrill (Geschichte)

Das Wort „Russengrill“ ist eigentlich a bisserl falsch, da wir keine Russen grillen! Mein Schwiegervater erzählte mir immer, wie die Russen Schaschlik grillen. Ohne Gemüse und Innereien! Ich konnte mir das nie vorstellen. Schmeckt doch nix und ist trocken, dachte ich mir. Da ich aber weiß, dass Russen nichts schlechtes oder fades essen, dachte ich mir, das versuchen wir. Nach langem fragen und viel Zeichensprache - mein Russisch is schlecht bzw. nicht vorhanden haben wir ansatzweise rausbekommen, wie man „russengrillt“ Das Rezept wurde verfeinert und ist mittlerweile einer meiner liebsten Grillarten.
Fleisch in ca. 4 cm große Würfel schneiden und in einen mindestens 5 Liter großen Eimer mit Deckel geben.
