He is such a generous host and in my vast experience it’s only the very best and most caring chefs that simply love to cook off-menu to delight their guests as Massimo did for us. Treat him with respect and you cannot be disappointed if you truly love TRADITIONAL Italian cooked food like a proper carbonara that isn’t made with cream like you get from the generics, real amazing thin crust pizza, authentic lasagne that isn’t swimming in béchamel and the list goes on.
