Max Krämer (l.) und Baris Özel haben einen Insekten-Burger entwickelt. Das Burgerfleisch besteht zu 43 Prozent aus Buffalo-Würmern (Getreideschimmelkäferlarven).
Gründer Max Krämer hatte die Idee in Thailand, wo frittierte Insekten eine Delikatesse sind. Er kam auf den Geschmack, schrieb seine Bachelor-Arbeit darüber und gründete mit seinem Schulfreund Baris Özel 2014 die Firma Bugfoundation. Der Vorteil von Insekten-Burgern: Der Patty hat die gleichen Nährwerte wie Rindfleisch. Bei der Herstellung entsteht aber nur ein Hundertstel an Treibhausgasen.
Ein weiteres Argument: „Massentierhaltung ist für Insekten das Paradies. Sie lieben es eng und dunkel.“ Da haben die beiden die Lacher der anderen Gründer und Investoren auf ihrer Seite. Nach einem Jahr in der Versuchsküche kamen im Juli 2015 die ersten Insekten-Burger auf den Markt – bisher allerdings nur in zwei Restaurants in Belgien. Im Rest der Europäischen Union ist Insektenfleisch noch nicht zugelassen – erst ab 2018.
Zur Enttäuschung der Zuhörer haben die Gründer nichts zum Verkosten dabei. Würde Metro -Chef Koch einen Insekten-Burger probieren? „Da gibt es sicher eine Hemmschwelle, Insekten zu essen. Aber so wie das Produkt heute schmackhaft gemacht wurde, würde ich den Bugs-Burger auch mal probieren“, meint Koch. Die Idee, Insekten als Burger zu verarbeiten, hält er für clever. „Und schiebt man einmal die psychologischen Vorbehalte beiseite, ist das eventuell eine sinnvolle und wohl auch nachhaltige Alternative für die Ernährung in der Zukunft.“
Fett, fetter, Omelette-Sandwich: Dieses arterienverstopfende „Frühstückchen“, das Burger King 2005 auf den US-Markt brachte, hatte so viel Kalorien, Fett und Cholesterin zwischen seinen labberigen Brötchenhälften, dass es heftig kritisiert und schließlich größtenteils vom Markt genommen wurde – in einzelnen Restaurants findet man es aber noch hin und wieder.
Pizza liebt jeder – aber nicht von McDonald's. Die Fast-Food-Kette hat seit den Siebzigerjahren immer mal wieder versucht, Pizza in ihrem Angebot in verschiedenen Ländern der Welt zu etablieren – mit mäßigem Erfolg. Der Hauptgrund, dass die Versuche bis zum Jahr 2000 fast überall wieder eingestellt wurden: Es dauerte mit durchschnittlich elf Minuten einfach zu lange, die Pizza in den Filialen zuzubereiten. Auch die McSpaghetti, ebenfalls ein Versuchsballon der späten Siebziger, konnten sich nicht bei der breiten Masse durchsetzen.
Für Hummer zu McDonald's? Das musste doch einfach schiefgehen. Das samt reichlich Sauce und etwas Salat in ein Hot-Dog-Brötchen geschaufelte Hummerfleisch verschwand nur wenige Wochen nach seiner Markteinführung auch schon wieder. Allerdings: In New England und im Osten Kanadas gibt es den McLobster noch, wann immer McDonald's billig tiefgekühltes Hummerfleisch einkaufen kann.
Burger King versuchte mehrmals, Mini-Burger an den Mann zu bringen. In den späten Achtzigerjahren hießen sie „Burger Bundles“, dann „Burger Buddies“ und um das Jahr 2000 versuchte es der Fast-Food-Riese nochmal mit den „Burger Shots“ als Sechserpack. Doch auch die Umbenennungen konnten nichts daran ändern, dass die Kunden einfach nicht zu den Mini-Brötchen greifen wollten.
McDonald's versuchte sich seit den Neunzigerjahren vor allem bei sommerlichen Sportereignissen im mittleren Westen der USA immer mal wieder am Würstchen im Brötchen – obwohl der frühere CEO Ray Kroc es eigentlich verboten hatte, weil er den Hot Dog als unhygienisch erachtete. Auch in Chile und Japan wurden für kurze Zeit McHotdogs verkauft.
30 Prozent weniger Fett, aber voller Geschmack – das versprechen die Satisfries von Burger King, ein Wortspiel aus dem englischen „satisfaction“, zu deutsch Befriedigung, und „fries“ für Pommes Frites. Allenfalls „befriedigend“ fanden die Kunden die Fritten, sodass die kalorienreduzierte Variante 2014 im wichtigen US-Markt größtenteils aus dem Programm flog – in Deutschland gibt es die fettärmere Variante hingegen noch.

Katholiken durften bis in die Sechzigerjahre hinein freitags kein Fleisch essen – auch in der Fastenzeit sollen sie auf Fleisch verzichten. Hier sah McDonald's-Gründer Ray Kroc eine Marktlücke und erfand den „Hula Burger“, der anstelle der Hackfleischbulette eine Scheibe gegrillte Ananas mit Käse enthielt. Der Burger war ein Flop – stattdessen setzte sich aber der Fischburger durch, den es als „Filet-o-Fish“ noch heute gibt.
Auch ein anderes Start-up will die Ernährung revolutionieren. Der Arzt Gennadi Schechtmann aus Aachen hat mit zwei Freunden ein Bio-Nahrungsmittel aus Obst, Hafer, Nüssen, Algen und Milch in Pulverform entwickelt. Mit Wasser vermischt soll der Food-Shake eine vollwertige Mahlzeit ersetzen. „Die ersten Versuche waren zwar gesund, aber haben ekelhaft geschmeckt“, erzählt Schechtmann von Trinkkost. Nun schmeckt der kaubare Shake nach Erdbeere und Nüssen.

Für Koch liegt die Geschäftsidee durchaus im Trend: „Der Markt für Getränke in Pulverform, die alle wichtigen Nähr- und Mineralstoffe enthalten, wächst in den USA rasant. Auch in Europa steigt die Nachfrage.“ Der Wettbewerb sei zwar stark, aber er könne sich gut vorstellen, dass solche Produkte auch in Deutschland ihren Markt finden.
Wie sich Trinkkost denn finanziere, fragt einer aus dem Publikum. Ungläubige Gesichter, als die Antwort kommt: mit einem Kredit von der Sparkasse. Wer cool sein will, finanziert sich als Gründer heute über Crowdfunding. „Der potenzielle Kunde wird so Teil des Projekts“, sagt Denis Bartelt, Hipsterbart und Hipsterbrille, der Startnext vorstellt. Startnext sei die größte Crowdfunding-Plattform für Projekte und Start-ups im deutschsprachigen Raum. Der Vorteil: „Damit lässt sich schnell erkennen, ob die Geschäftsidee überhaupt eine Nachfrage hat“, so Bartels.
Original Unverpackt etwa, ein Supermarkt ohne Verpackung aus Berlin, habe 100.000 Euro über Startnext eingesammelt. Allerdings sei Deutschland in Sachen Crowdfunding noch ein Entwicklungsland, bedauert Bartels. Hierzulande würden pro Kopf 1,70 Euro im Jahr investiert, in Großbritannien seien es insgesamt rund 30 Euro. Das will Bartels ändern: „Wir sind die digitale Revolution für Gründungsprozesse.“
Die Gründung bereits erfolgreich hinter sich haben Emmas Enkel. Wer online bestellt, kann die Ware direkt in kleinen Läden in der Nachbarschaft abholen oder sich per Elektroauto liefern lassen. Im Online-Shop seien derzeit innovative Produkte diverser Start-ups die Renner, sagt Geschäftsführer Sebastian Diehl. Was bei den Kunden nicht ankomme, werde schnell wieder ausgelistet.
