What you are looking down into is the crown cooling passage. The squirters are arranged such that they direct the oil at a port in the piston underside, and it circulates/sloshes in this gallery for some time before running out holes on the other side.
Piston-cooling jets squirt oil on the underside of the pistons to keep the piston crowns cool under extreme operating conditions. The cooling jets also allow for a higher compression ratio for better engine efficiency and faster engine oil warm-up on cold starts, also improving fuel economy.

Picked up a nice 856 with an M&W turbo. My first question is anyone pulling these? if so are you running farm stock ,hot ect.? Does anyone if the m&w kit come with the oil squirters . Will these motor handle any mods or should I look for a DT407

The NA squirters direct the oil towards the middle of the underside of the piston, which has no passages inside. They blocks have all of the same oil passages. Two passages are plugged with a bolt on the NA block (one on each outside face that feed the turbos on a TT).

Sumping issues solved - Page 8I friend pointed me to a video the GMR put out about some M8 piston jets coming loose. I learned that the M8 jets are different than the twin cam because they use gaskets instead of o-rings. Apparently, the gaskets can crush down after a while and make the jets loose. If I recall, GMR said that S&S makes some better gaskets for the M8 jets.
