Trinxat de trumfes i xicoies, amb els seus cruixents

 Ingredients:

600 gr. de xicoies

1 kg de trumfes

½ cap d’all

Oli d’oliva

Panses i pinyons

4 tires de cansalada viada

Cruixents vegetals (porro, carrota etc…)

Preparació prèvia:

Dins d’ un cassó fem coure les trumfes tallades a bocins mitjans amb aigua salada i un raig d’oli d’oliva, al quart d’hora de cocció hi afegim les xicoies netes i triades perquè se’ns escaldin juntament.

Elaboració:

quan tinguem les trumfes ben cuites , ho escorrem amb l’ajuda de un colador, ho aboquem dins de un recipient on amb l’ajuda de una rasera o trinxarem fins a obtenir una textura fina i homogènia, al mateix temps hi afegirem els alls picats i sofregits ambo li d’oliva, ho rectificarem de gust i ho reservarem fins al moment de preparar el trinxat.

D’altra banda farem “xips” de moniato, iuca i porro, tot tallat ben finet i fregit amb oli ben roent, ho reservem al damunt d’un paper de cuina perquè s’assequin bé.

Dins d’una paella amb un raig d’oli d’oliva fem rostir els talls de la cansalada fins que ens quedin ben rossets, els reservem i dins la mateixa paella amb el greix que ens deixat, hi fem el trinxat per les dues bandes fins que ens quedi ben rosset.
