When it comes to dessert, especially to top off the Thanksgiving feast, I declare I’d choose pie over cake anytime. But what kind? That’s the burning question. Following family tradition, creamy pumpkin pie will probably prevail, although spicy apple is a favorite, right up there with gooey pecan.
Since I won’t make all three, as that would be excessive, a pie made with apples, or pumpkin, with a crunchy topping of nuts, brown sugar and butter will do nicely to satisfy the craving for more than one pie flavor. There’s even a crust-less pumpkin slab pie topped with a buttery oatmeal, brown sugar and nut crunch that will feed a crowd.
2 pounds tart apples, peeled and cut into 3/4-inch-thick wedges
Directions: Preheat oven to 425-degrees F. Freeze pastry shell 20 minutes, or till firm.
Meanwhile prepare crumble topping: In medium bowl, combine flour, brown sugar and cinnamon. With pastry blender or 2 knives, cut in butter till mixture resembles coarse crumbs. Stir in nuts. Set aside.
For apple filling: In large bowl, combine sugar, flour, nutmeg, cinnamon and salt. Whisk in sour cream, egg, lemon juice and vanilla till smooth. Stir in apples. Turn filling into pie shell.
Sprinkle Cinnamon Crumble evenly over top of pie.
Place pie on baking sheet and bake 20 minutes. Reduce oven temperature to 350-degrees F. and bake 40 to 45 minutes longer or till apples are tender when tested with sharp knife. Cool on wire rack. Serves 8.
1 unbaked (9-inch) pie shell with fluted edge
1 (16-ounce) can pure pumpkin puree
Directions: For filling, combine pumpkin, sugar, spices and evaporated milk in bowl. Beat with electric mixer on low speed till smooth. Pour into unbaked pie shell.
Bake in preheated 425-degree F. oven 10 minutes. Reduce oven temperature to 350-degrees F. and bake 15 minutes more.
Prepare topping: While pie is baking beat 2 eggs in bowl till foamy with electric mixer on medium speed. Add dark corn syrup, brown sugar, molasses, vanilla, flour and salt. Beat till smooth.
Remove pie from oven and pour molasses topping over all and sprinkle with pecans. Return pie to oven and bake 35 minutes longer or till custard is set. Cool on rack. Serves 8.
1 (29-ounce) can pure pumpkin puree
14-ounce can sweetened condensed milk (not evaporated)
Directions: In large bowl, combine pumpkin, eggs and spices, mixing well. Stir in milks and vanilla. Pour into a greased 13×9-inch baking pan.
Prepare topping by stirring together oats, brown sugar, flour, cinnamon and nuts. Pour melted butter over top and toss to mix.
Spoon crunch over the pumpkin mixture. Bake in preheated 350-degree F. oven 45 to 55 minutes, till knife inserted in center comes out clean. Watch carefully so topping doesn’t burn. Serve warm with whipped cream. Serves 12.

Homemade Pie Conundrum -
Bicycle Touring Past Pie Shops
"I can resist anything but temptation!" Those are the famous words
of Oscar Wilde during his loquacious career as a playwright.
Last year, on the Lewis & Clark Trail out of Astoria, Oregon---every
time we passed a home made pie shop, Sandi demanded that we stop and taste
the culinary delights. Each time, huckleberry pie, marion berry pie, peanut
butter-chocolate pie, lemon pie, apple pie, banana cream pie, blue berry
pie and several other pies beckoned from the windows of those local shops.
We failed to find discipline enough to avoid those pie shops. As we ordered,
our mouths watered in expectation. That first bite, well, sheer salivary,
mouthwatering bliss. We stuffed ourselves full of home made pies. We ate
until our tummies burst with fullness and outright joy. We savored every
single bite. We swallowed those pies with an almost spiritual appreciation.
The tastebuds on our tongues summersaulted with ecstasy with each mouthful.
Does anyone else suffer from this affliction or should I call it an addiction?
At the end, we tipped the wait persons, thanked the pie-making staff
and got back onto our bicycles. We pedaled down the highway with a sense
the world was our "pie shop" as we conquered adventure highway. I think
it was Ben Franklin who said, "God made pies so that men and women would
be happy." Or was that beer? Who cares! Sandi and Frosty Wooldridge, Lewis
& Clark Trail, eastbound, summer 2016.

Just before Cass returns from The Empty, Dean takes a detour. When Cass finally finds him, what happens when he tells Dean what's actually on his mind?
I've just got to season 14 and I don't think I'm ready for this... Anyway. There aren't enough moments of Dean's love for pie, and his love for Castiel so I created a oneshot with both of these things in it and this is what it turned into. Enjoy!
(See the end of the work for more notes .)
There was a diner, in Lebanon, Kansas, called The Grilled Chops . The interior has dark red sofa chairs, with white booths towards the back and pictures of landscape, country roads and odd frames of maps of the local area.
It was early morning, about two o'clock, and there were a few people who had come from a long journey to rest and eat, before continuing on their adventures. And there were more than a few who needed to have hangover food from a heavy night out.
There was one man, wearing a dark blue and black flannel shirt and black jeans with slightly scruffy hair that probably hadn't been brushed in a while, sitting next to the window in a booth by himself, who fell into neither of those categories.
He had been having a hard time. He told his brother Sammy that he needed a win. Any win. So he ditched him, to go to the nearest diner. If he couldn't save anyone, he… He didn't know what to do. Was there any point to anything, anymore?
He chuckled lightly, imagining Bobby sitting opposite him, calling him an "Idjit."
Maybe he was foolish. Maybe he was losing faith. But you know what he wasn't losing faith in?
"A cherry pie, and an apple pie, with a black coffee. Enjoy your meal," the waitress said, looking at him in disbelief as she placed the whole two pies (that were from the countertop, and meant for someone to have individual slices) and placed the coffee on a coaster.
"Oh, I will." Dean replied, nodding at the waitress as she left, watching her walk away briefly, before looking back at the pies in front of him with a stupidly happy grin on his face.
He picked up his fork, humming a jolly tune as he almost dug in. Almost.
There were two great pies in front of him. All for him. And he was actually going to get to eat them all. No one was going to come in and interrupt, and no one was going to try and take them away from him. If they did, well… They weren't going to live to find out why they shouldn't.
"Oh, babies," Dean muttered, pouting, as he glanced from one to the other, his eyebrows furrowed together with confusion and conflict. "The apple pie is a classic. One of the best. Definitely worth the first bite. Only, on the other side, we have the greatest cherry pie I've ever seen. That one is also definitely worth the first bite…" He trailed off, well aware that he was talking to himself, and he probably did look like an idiot, but he didn't care.
This was a delicate matter, one very close to his heart.
He sat there, perhaps for another minute or two, his head turning from one pie to the next. He had to test them. He had to eat them. So, he brought his nose down to the level of the cherry pie and sniffed it. The warmth, and the cherry filling his nose was close to what he thought his own Heaven would be like. He then picked his fork up carefully, his eyes narrowing as he used the back of the fork to tap on the crust. A tad soft. A little crunch of the pastry, which was always a good thing. His eyes narrowed even closer together as he measured the ratio of pie and cherry.
He turned to the apple pie, and did the exact same measurements.
Another twenty minutes later and he still hadn't decided. His head was in his hands, shame and conflict written all over his face. The pies were still warm, but they wouldn't be for much longer. Why had it been his idea to get two of the best pies ever? Why couldn't he have just settled with one?
This didn't really feel like a win, either.
If he couldn't decide between his pies, what hope did he have in saving people? Protecting (and more importantly, finding) Jack? What was the point of it all?
"I don't understand why you would turn off all your mobile communication devices, how do you expect people to find you…" the voice trailed off, as if suddenly realising something. "Oh, I know that look, Dean. It's alright. You'll be alright."
"No I'm not alright, Cass. I'm broken. What do I choose? They're both perfect…" Dean responded, not registering quite who it was, as he continued to stare at his pies.
"Ahh. The pie conundrum… Have you taken into account that you could eat both in the same mouthful? Although, perhaps, that wouldn't taste very nice…"
Dean jerked his head so fast that he was surprised it didn't crack, as he spotted who the voice belonged to. He was leaning against the side of the booth, arms folded, his duffle coat still intact and his hair looking surprisingly cute. He noticed the frown, as his best friend stared at the pies in front of him.
His mouth opened involuntary, and Dean had to subtly adjust himself as he got a proper look at Cass. He coughed, clearing his throat to stop a blush from creeping onto his cheeks.
"Did you just say pie conundrum, with a straight face?" Dean couldn't help but ask, a true, amused smile appearing on his face for the first time in a while.
"Well, yes, Dean. Pies are of great importance to you, I wasn't going to be light hearted about the matter. I'm sorry I was of no help," Castiel replied, sorrowful.
"Are we just going to skip over the fact that you're meant to be dead?" Dean asked, very glad that that statement was no longer true. Perhaps he could finally believe in something, again.
He watched as Castiel sat opposite him, his elbows leaning on the table, with his hands clasped together. A deep, worried frown on his face as he studied Dean intensely. "Dean, I was dead. I was in a place called the Empty, asleep, until someone called out to me, waking me up and annoying a celestial being at the same time. I managed to annoy him so much that he returned me back to Earth…"
"Yeah, yeah. Alright. That's really great to hear, welcome back," Dean said, interrupting the story at the end, just pleased to see him again, a grin on his face as he connected with Castiel's eyes, both studying each other for a little longer than necessary.
Dean broke eye contact first, scratching the back of his head with a somewhat shy smile. "I'm treating this as a case, Cass. I will not rest until I've fairly decided which pie to eat first –"
He looked up, strangely a little disappointed in the answer, raising an eyebrow at his best friend. "Why?"
"You know why," Castiel replied, before giving him a small smile. "Have the apple pie. Save the best for last."
Dean grinned widely, Cass knew him so well. It was nice to have that. "Thanks, Cass. It's good to have you back," he said, sincerely.
Dean put his hand up to stop Cass from talking, as he smiled, picking up his fork once again. He dug into the apple pie, taking a huge first mouthful of it, moaning in enjoyment at the taste. It was good.
What he didn't notice was Castiel looking a little uncomfortable just after hearing Dean moan, moving in his seat, trying to look anywhere but at Dean.
They sat in silence, while Dean devoured the apple pie. He got through about half of the pie, when Castiel dared to speak again.
Dean glanced up, mid mouthful, frowning in confusion at the random statement his best friend had just made, he swallowed before asking, "What do you mean?"
His frown deepened, as Castiel glanced around and leaned closer to Dean, lowering his voice as the corners of his mouth moved upwards into a small smile. "There was a reason I needed to go back to Earth. I thought I had more time. I thought we had more time. You moaned, just then. It made me uncomfortable… In a good way," Castiel said, all in one breath, looking at Dean with vulnerability, and open, honest eyes.
Eyes that, as much as Dean didn't want to admit, made him the happiest he had been in, well, ever. He couldn't stop the deep red blush forming on his cheeks, not being able to look away from his best friend, trying to find something to say. Anything to say.
"Yeah, do you have a problem, down there?" Dean whispered, giving Castiel a flirtatious smile, winking subtly at him as his heart started beating heavily. He was surprised that Castiel was confident enough to tell him… that . It was a great surprise, though. Losing him made Dean realise that he didn't see Castiel as family. He saw him as something more.
"I do. Dean, I'd like it if you –"
He was going to kill Sammy one day, he was sure of it. What had Castiel been about to ask him? He needed to know!
He pouted, as Sam sat next to Castiel, and he picked up his fork once again, munching on his pie as he let his mind wonder about things he probably shouldn't be thinking about his best friend.
"What did I do?" Sam asked, glancing from Dean to Castiel, to Dean again.
Interrupted a very important conversation, if you hadn't come here for another two minutes … Dean thought, grunting in response as he stuffed his mouth again.
"Sam, it's good to see you again. You got my voicemail?" Castiel said, doing his best not to sound as disappointed as he felt.
Dean frowned deeply, p
