This Mexican popular cuisine was the origin of what we think about as Mexican food. And what about the origin of the word itself? My theory is that it dates from the 18th century and the silver mines in Mexico, because in those mines the word “taco” referred to the little charges they would use to excavate the ore. The word “taco” in a restaurant name was actually a way of selling Mexican food to non-Mexicans.
