Solche gewaltigen Ausbrüche bäuerlicher Unzufriedenheit waren selten. Sie traten am häufigsten auf, wenn das Leben in den Dörfern durch die Ausschreitungen von Soldaten, königlichen Beamten oder den Angriff von Feudalherren auf die Rechte der Bauern wirklich unerträglich wurde. Normalerweise wussten die Dorfbewohner, wie sie mit ihren Herren auskommen sollten; beide lebten nach altmodischen, uralten Bräuchen, in denen fast alle möglichen Streitigkeiten und Meinungsverschiedenheiten vorgesehen waren.
Die Bauern wurden in drei große Gruppen eingeteilt: freie, landabhängige und persönlich abhängige. Es gab verhältnismäßig wenige freie Bauern; Sie erkannten die Macht eines Herrn über sich selbst nicht an und betrachteten sich als freie Untertanen des Königs. Sie zahlten Steuern nur an den König und wollten nur vom königlichen Gericht beurteilt werden. Freie Bauern saßen oft auf ehemaligen „Niemands“-Ländern; es könnten gerodete Waldlichtungen, trockengelegte Sümpfe oder von den Mauren (in Spanien) eroberte Länder sein.
Ein landabhängiger Bauer galt ebenfalls als frei, aber er saß auf dem Land des Feudalherrn. Die Steuern, die er an den Herrn zahlte, galten nicht als Zahlung „pro Person“, sondern „aus dem Land“, das er nutzt. Ein solcher Bauer konnte in den meisten Fällen sein Stück Land verlassen und dem Seigneur entkommen - meistens behielt ihn niemand, aber er konnte im Grunde nirgendwo hin.
Schließlich konnte ein persönlich abhängiger Bauer seinen Herrn nicht verlassen, wenn er wollte. Er gehörte mit Leib und Seele seinem Herrn, er war sein Leibeigener, d.h. eine Person, die durch ein lebenslanges und unauflösliches Band mit dem Herrn verbunden ist. Die persönliche Abhängigkeit des Bauern drückte sich in demütigenden Bräuchen und Ritualen aus, die die Überlegenheit des Herrn über den Pöbel zeigten. Die Leibeigenen waren verpflichtet, für den Herrn Frondienst zu leisten - um auf seinen Feldern zu arbeiten. Die Fronarbeit war sehr schwierig, obwohl uns heute viele Pflichten der Leibeigenen eher harmlos erscheinen: zum Beispiel der Brauch, dem Herrn zu Weihnachten eine Gans und zu Ostern einen Eierkorb zu schenken. Als jedoch die Geduld der Bauern am Ende war und sie zu Mistgabeln und Äxten griffen, forderten die Rebellen neben der Abschaffung der Fronarbeit auch die Abschaffung dieser ihre Menschenwürde erniedrigenden Pflichten.

Am Ende des Mittelalters gab es in Westeuropa nicht mehr so viele Leibeigene. Die Bauern wurden von freien Stadtgemeinden, Klöstern und Königen aus der Leibeigenschaft befreit. Viele Feudalherren verstanden auch, dass es vernünftiger war, Beziehungen zu den Bauern auf einer für beide Seiten vorteilhaften Basis aufzubauen, ohne sie übermäßig zu unterdrücken. Erst die extreme Not und Verarmung der europäischen Ritterschaft nach 1500 zwang die Feudalherren einiger europäischer Länder zu einer verzweifelten Offensive gegen die Bauern. Der Zweck dieser Offensive war die Wiederherstellung der Leibeigenschaft, "der zweiten Ausgabe der Leibeigenschaft", aber in den meisten Fällen mussten sich die Feudalherren damit begnügen, die Bauern vom Land zu vertreiben, Weiden und Wälder zu beschlagnahmen und einiges Altes wiederherzustellen Zoll. Die Bauern Westeuropas reagierten auf den Angriff der Feudalherren mit einer Reihe gewaltiger Aufstände und zwangen ihre Herren zum Rückzug.
Die Hauptfeinde der Bauern im Mittelalter waren noch nicht Feudalherren, sondern Hunger, Kriege und Seuchen. Der Hunger war ein ständiger Begleiter der Dorfbewohner. Alle 2-3 Jahre gab es auf den Feldern einen Mangel an Ernte, und alle 7-8 Jahre kam es zu einer echten Hungersnot im Dorf, als die Menschen Gras und Baumrinde aßen, die in alle Richtungen verstreut waren, und bettelten. Ein Teil der Dorfbevölkerung starb in solchen Jahren aus; es war besonders hart für Kinder und ältere Menschen. Aber auch in den Erntejahren strotzte der Bauerntisch nicht vor Nahrung – seine Nahrung bestand hauptsächlich aus Gemüse und Brot. Bewohner italienischer Dörfer nahmen ihr Mittagessen mit aufs Feld, das meistens aus einem Laib Brot, einer Scheibe Käse und ein paar Zwiebeln bestand. Die Bauern aßen nicht jede Woche Fleisch. Aber im Herbst fuhren Karren voller Wurst und Schinken, Käseköpfe und Fässer mit gutem Wein von den Dörfern zu den städtischen Märkten und den Schlössern der Feudalherren. Die Schweizer Schäferhunde hatten aus unserer Sicht einen ziemlich grausamen Brauch: Die Familie schickte ihren halbwüchsigen Sohn allein den ganzen Sommer zum Ziegenweiden in die Berge. Sie gaben ihm kein Essen von zu Hause (nur manchmal schob eine mitfühlende Mutter, heimlich von seinem Vater, in den ersten Tagen ein Stück Kuchen in ihren Busen). Der Junge trank mehrere Monate lang Ziegenmilch, aß wilden Honig, Pilze und überhaupt alles, was er auf den Almwiesen essbar finden konnte.
