Adas lentils are a local variety, mainly produced on the Kerkennah Islands and the nearby mainland region of Sfax in central Tunisia. They are smaller and more rounded than ordinary lentils and dark brown in color. The plant is small and hardy with small leaves. It is propagated by seeding in the autumn after the first rains, and harvested in May. Nutritionally, this variety of lentil is rich in iron. At first it was a plant that grew naturally and was not used or purposefully cultivated. In fact, in Sfax it was first considered a weed. However, on the islands of Kerkenna, it proved a useful food source for a population that had no other means of buying legumes. Today, however, it is grown by farmers and used mainly in soups.
