At Sally Lane’s Candy Farm, three generations carry on a sweet Paris, Tennessee tradition. But their reach extends far beyond their West Tennessee community, thanks to unforgettable treats made with a special touch.
Established in 1958 by Sally Lane Jones, the brand gets recognized for its pink and green mints, which have been staples at weddings, baby showers and other events for decades. While the business has changed hands over the years, the original recipes remain the same.
Longtime Paris resident Shelby Freeman and her daughter, Pam Rockwell, wanted to purchase Sally Lane’s when it was up for sale in 2006, but their husbands, Bobby Freeman and Rick Rockwell, weren’t so sure. However, when Pam’s father realized the candy farm would bring her back to Paris, he saw it as a worthy investment. Eventually, the family added on to their 100-year-old farm’s carriage house to create a candy factory, which they still use today. As the operation grew, everyone started pitching in.
While word of mouth has helped Sally Lane’s find success, media outlets, special events and local shops have also contributed to the brand’s impressive growth.
The first major media buzz took place in the spring of 2009, when Rachael Ray featured Sally Lane’s white-chocolate popcorn on her show’s “Snack of the Day” segment. The shop has since appeared on Tennessee Crossroads and still sees a boost every time the episode airs in reruns. “We’ve just been lucky,” Pam says. “At least once or twice a week, somebody comes in and says, ‘I saw you on Tennessee Crossroads.’ ”
For more than 55 years, Sally Lane’s has been a fixture in the Paris community, and the shop has become a place where older generations reminisce while introducing a new generation to the timeless treats.
Tried out a yummy new recipe this weekend while I was home. This one came from Rachael Ray's magazine. This one was easy to veganize by subbing margarine for the unsalted butter and 1/4 tsp salt (added to the fudge ingredients, not the base) called for in the original recipe. So simple to make! They're REALLY rich though, so cut 'em small!
Chocolate Peanut Butter Fudge Crunch
6 ounces semisweet chocolate, chopped (or use chips)
2 sticks (8 ounces) plus 1 tablespoon margarine
One 16-ounce jar creamy peanut butter
1. Line an 8-inch square baking pan with parchment paper. In a medium saucepan, melt half of the chocolate and 1 Tbsp margarine over low heat. Remove from the heat; stir in 1 cup peanut butter, then 2 cups rice cereal. (I plan to up this to 2.5 cups the next time I make these.) Spread the mixture evenly in the prepared pan; refrigerate until set, about 15 minutes. Wash out the saucepan.
2. In the saucepan, combine the remaining 2 sticks margarine; melt over medium heat, stirring. Remove from the heat and stir in the remaining peanut butter and the confectioner's sugar. Spread half of the peanut butter mixture over the cereal layer. Top with the remaining 1 cup cereal (I used closer to 1/2 cup here to be sure the fudge layers actually stuck together).
3. In a small bowl, microwave the remaining chocolate at medium power until melted, 1 1/2 minutes. Stir into the remaining peanut butter mixture. Spread evenly on the cereal-topped peanut butter layer; refrigerate until set, about 45 minutes.
Cut into 16 pieces. (I actually cut mine smaller since these are SO rich. I probably got closer to 30.)

Ended up going the sushi route this evening. With this spread, you're looking at Rachael Ray's daily allowance of food-spending-money, likely due to the Toro nigiri.
Growing up on this stuff, I had developed an undying love for sushi; however, as of late, I haven't been eating a whole lot of carbs (once per week). I do feel it is crucial for me to have at least a pound of seafood per week and sashimi is always an option, but to have it with seasoned rice is such a delightful treat. Why not splurge a little on this special evening?

This one is 4 exposures tone mapped using Photomatix software. Again, we have that night shooting situation of super bright highlights and deep dark shadows. As Rachael Ray would say "Yummo". I would say something unprintable if I couldn't rescue this with Photomatix. Adding to the complications was a gaggle of Leaky Tikis that insisted on trash talking me as I was shooting this. Then again it could have been the rum in the Dole Whip that was doing the talking....
This veggie packed stirfry is punched up with Szechuan peppercorns, Chinese five spice, ginger and garlic and is finished with Szechuan and Mongolian sauces. Not only is it deliciously exotic, but it's gluten free and vegan too!

Behold. The entrance to one of my favorite restaurants down here in Key West. Blue Heaven. It's the most charming little place with all of the seating under the trees on a brick patio outdoors. The story is that Ernest Hemingway used to come here to box back in the good ole days. But the best part about this restaurant is the chickens. There are chickens in the trees up above the patio and chickens (and roosters too of course) roaming the patio, along with several cats. I just love it. It is indeed heaven.
This particular kind of shroom always make me think of this great Rachael Ray dinner I make..... Chicken and Mushrooms with Balsamic Cream Sauce....... yum. Find the recipe here. You know that if I could take pictures of everything that I cook..... I would. But alas, there aren't enough hours in the day...... sigh.
oh, and by the way.....if you make the recipe, double the mushroom sauce part..... you'll run out if you don't, cause everyone will want tons of it . I personally could eat just the mushroom sauce, hold the chicken and orzo. Yes, it's that good.

I give Rachael Ray credit for this one. She introduced me to the Kitchen Garbage Bowl several years ago. I have 3 of these in different colours. I throw kitchen recycling in it, not garbage. I then dump it in my big recycling barrel in the garage. It's a great way to make sure you don't toss recyclables in the garbage.

Baked Ziti Neapolitan. I used my sister in laws recipe which is based on a Rachael Ray version. Ever since I watched the Soprano's I have wanted to try baked ziti. I thought it turned out very well. Cheesy and good. mmm.
* 2 tablespoons EVOO - Extra Virgin Olive Oil
* 4 cloves garlic, grated or minced
* 1 28-ounce can whole plum tomatoes (look for ones from San Marzano)
* 1 large ball fresh mozzarella, diced
* 1/4 cup (a handful) grated Parmigiano Reggiano
Place a large pot of water over high heat and bring up to boil to cook the ziti. Once boiling, add some salt and the pasta, and cook just shy of al dente. Drain thoroughly.
While the water is coming up to a boil, start the red sauce: Place a medium-size saucepot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the onion and garlic, and cook, stirring every now and then until the onions start to get tender, about 3-4 minutes.
Add the tomatoes and smash them up into small pieces with a potato masher or with the back of a spoon. Add the basil and season with some salt and pepper. Bring up to a bubble and simmer for 15 minutes.
Once you have the red sauce working, make the white sauce: Place a medium-size saucepot over medium heat and melt the butter. Add the flour, stir to combine and cook for about a minute. Whisk in the milk, add the bay leaf and season with some salt, pepper and a couple of grates of nutmeg. Bring up to a bubble, turn the heat down to low and gently simmer, stirring frequently, for 5 minutes. Remove the bay leaf and discard.
Combine the cooked ziti with the red sauce in the pot the pasta was cooked in and transfer everything to a baking dish. Top with the white sauce. Sprinkle the mozzarella and grated Parmigiano over the top, transfer to the oven and bake for 25-30 minutes.
This is my sister in laws recipe(Thanks!). All I changed was the milk. I only had nonfat so I used a little heavy cream to thicken it up.
I use this big bowl to hold all my recyclables from the kitchen. When it's full I dump it into my bags out in the garage. I have 3 bags. One is just for glass, the other two are for paper, cans and anything else that can be recycled.

1 refrigerated pizza dough, or one from your favorite pizza joint
Cornmeal, for sprinkling on pizza pan
Extra-virgin olive oil (EVOO), for drizzling
1/4 cup grated Romano or Parmigiano Reggiano cheese
1-1/2 to 2 cups shredded provolone cheese
A handful of flat-leaf parsley, chopped
Preheat oven to 450°F. Roll out dough into a large, thin, round or rectangular shape. Scatter a little cornmeal on the pizza pan or baking sheet before placing rolled-out dough on it. Drizzle dough with EVOO and prick it with fork tines in a few places.
Place in oven and partially bake for 7-8 minutes. Drizzle EVOO in a small skillet and heat over medium-high heat. Cook pancetta until crisp, 4-5 minutes. Transfer to a bowl and cool. Brush the baked pizza crust with some of the grease from the skillet you cooked the pancetta in for a little extra flavor. (I skipped that step; extra grease not necessary) Add beaten egg yolks, ricotta, Romano, grated garlic and black pepper to a bowl and stir to combine.
Spread the ricotta cheese mixture out over the pizza crust, then top with provolone cheese.
Scatter the reserved pancetta all over and bake 12 minutes or until crust is crisp and the cheese is evenly golden on top. Scatter parsley over cooked pizza, cut into wedges and serve.
