Only a few resorts in the world have their own hydroponic greenhouses. Karisma Hotels and Resorts, here on the Mayan Riviera, is one. Tomatoes right from the vine, cucumbers, peppers, chilies, squash, beans, various herbs and an assortment of other greens — all are grown on site, picked daily and served fresh the same day. The hydroponic process is designed to grow well-balanced fruits and vegetables. Nutritious minerals are fed to the plants which are not grown in soil. Plants absorb the nutrition faster and more easily. The result is a more nutritious and tastier produce. He came to the resort, at its invitation, to meet some of the chefs there and join them in cooking gourmet food, Mexican-style. Moises Ferreyre, a chef at the resort, escorted his Canadian visitor to the hydroponic greenhouses, where he had a table set up to show the Capra how to make a traditional Mexican salsa. The two chefs made their rounds in the greenhouses, ducking in and out of the hanging plants, picking tomatoes, cilantro, onions, juicy lemons, habanero peppers. Capra was escorted to the beachfront. Here, he saw a grill set up. Chef Wagner Perez waved at him. An audience gathered on the beach. Another chef waited at the grill. The three men carved the fish up and made a basting sauce of lemon juice, onions, mild red peppers, chopped garlic, cilantro, ginger, habanero peppers, celery and salt. The mixture was crushed together in a mortar to create a red sauce, and this, they poured on to the grouper. The fish was wrapped in palm leaves and placed on the grill. The chefs ate the grouper sitting on the white sand beach, feet in the inviting water, cervezas in hand. The monument stands more than 15 metres high and serves as an entry point to the popular Playa beach. It portrays a man and a woman being propelled towards the sky by spiralling water and wind and surrounded by items of significance, past and present, from the area. When the bell for dinner rang, the Canadian chef returned to the resort to meet Chef Paolo Serra, who only spoke Italian and was in charge of the pasta-making. The chefs began reminiscing about their native Italy and how their mothers would make pasta. The two men bantered about their Italian heritage as they created a pasta dish that included parsley, garlic, olive oil, lobster and scallops whipped up in a frying pan. Then they added the freshly made spaghetti. Just a few have mastered the vine-to-table approach that prepares food with gourmet flare for each day of your vacation.
