Ingredients 1/4 cup soy sauce 2 tablespoons brown sugar 1 tablespoon rice vinegar 1 teaspoon garlic powder 1/2 teaspoon ginger powder 1/4 teaspoon black pepper 1/4 teaspoon red pepper flakes (adjust to your spice level) 1/4 teaspoon paprika 1/4 teaspoon cumin 1/4 teaspoon turmeric 1/4 teaspoon coriander 1/4 teaspoon salt 1 pound boneless, skinless chicken breasts or thighs, cut into thin slices 2 tablespoons vegetable oil 1 large onion, sliced 2 tablespoons cornstarch 1/4 cup water 2 tablespoons ketchup 2 tablespoons sriracha sauce (adjust to your spice level) 2 tablespoons honey Sesame seeds and chopped green onions for garnish (optional)

Directions In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, garlic powder, ginger powder, black pepper, red pepper flakes, paprika, cumin, turmeric, coriander and salt. This is the marinade for the chicken. Place the chicken slices in a large ziplock bag or a shallow dish. Pour the marinade over the chicken and toss to coat well. Refrigerate for at least 30 minutes or up to overnight. In a large skillet over medium-high heat, heat the oil. Add the onion and cook, stirring occasionally, until soft and golden, about 15 minutes. In a small bowl, whisk together the cornstarch and water. This is the slurry to thicken the sauce. In another small bowl, whisk together the ketchup, sriracha sauce and honey. This is the island fire sauce. Remove the chicken from the marinade and discard the excess marinade. Add the chicken to the skillet with the onion and cook, stirring occasionally, until the chicken is cooked through and slightly charred, about 15 minutes. Add the slurry and the island fire sauce to the skillet and bring to a boil. Reduce the heat and simmer until the sauce is thickened and glossy, about 5 minutes.
