I imagine it’s difficult for people who were cursed in their upbringing with a lot of body-shame, but I wasn’t and I had no trouble with it.
Peeing and pooping are natural body functions that should not be cause for any embarrassment at all, it’s just completely unimportant. As for people seeing your genitals, so what? There’s only two kinds; what’s between your legs is hardly a secret.
So, “What's it like to use a toilet without any privacy”? For me it’s exactly the same as using a toilet with privacy.
I’m pretty sure the toilet doesn’t care either.

In older latrines once you get past that lack of privacy you start to worry about other things such as the ability to sit down to do your business and not be so close as to touch each other’s legs (These are the older style where you can image a single long board (little more to it that that) with holes cut out for your butt and that’s about it. In some of the new versions you have stalls with no doors and in others where you have unisex bathroom you have doors. So really depends on the barrack or location you are spending your time. You can also find some wooden built shacks (not total enclosed) on longer deployments when they had time to build them or have the local porta potty folk’s drop off a few dozen of them and come back once a month to clean them.
