(Optional) Cut a small piece of the potato along the bottom in order to make a flat edge that the potato be stable on
Make several cuts into the potato. The spacing of each cut is up to you. Just make sure not to cut through the whole potato maybe 75%. You can place wooden spoons along the sides of the potato, and cut down till you make contact.
Make your butter. I just buy some butter, crushed garlic and thyme in a pan, and waited for the butter to melt at low heat.
Brush the butter onto your potato, sprinkle salt and pepper and then put them into a oven at 200c/390f for 30min
After 30min pull out your potatoes and rebrush them the butter. Make sure to get in between the cuts with the butter as the cuts should be more open now.
Bake for another 30min or until crispy and sprinkle some extra herbs on it if you want. I added some parsley

Long time ago a chef I used to work with loved calling them David potatoes..can you guess why?🤣
Haha, I’m assuming a certain someone loved them far too much 😅
I’ve tried these several times with little success. It’s been a few years and based on this I guess it’s time to give it another shot. Yours look great.
Chop sticks work great for making the cuts.
Time and butter... Don't skimp on both 😇

Chop sticks are a great tool for Hasselback potatoes.
That's an original from the resturant "Hasselbacken" on Djurgården, Stockholm, Sweden. Have been dining there a couple of times. Nothing special really but a very well known name.
It was very popular here in the 80's, I even learned how to do it in school. I still like it. Done right it is a really great dish.
Always interesting to se how things spread around the world. But please skip the cheese and save my poor Swedish heart.
