This is an interesting point. I guess the movie doesn't explicitly tell us how Blanc knew that. But if it was from the note, that would be very meaningful information.
From there, the trail of logic is very simple:
Blanc knew Marta would lie to him. But he also knew that her lies didn't mean that she was the killer. Therefore, he picks her to assist him in his investigation. But at every turn, never truly suspects her of being guilty. His brain is always searching for an explanation of "how did someone try to frame her".

One of the director's primary influences on this movie was The Last of Sheila. I recommend seeing this movie without reading anything about it. It's pretty odd and very fun.

This probably counts as a theory in that it wasn't explicitly spelled out for us in the movie, but I've always assumed most of this was the intention anyway.
Although, to your point about how Blanc knew about Marta puking. There's a couple other possibilities which are imo more likely in a realistic sense.
One of the Thrombey's told him off-screen. We almost certainly don't even see half of each interview, do it's easy to believe one (or multiple) family members mention it during this time. Although I like this less than the other ideas.
The second option is that Marta told the police before Blanc arrived. I'm not 100% confident in this, but iirc Blanc first arrives on the day of Harlan's funeral, meaning some amount of time (at least a couple days) have passed since Harlan's death.
If that's the case, then it's likely that the police have spoken to Marta and the family at least once already. If she mentions her "condition" then, the police could have told Blanc, and now he knows before he interviews her.
Other than this possible point, I fully agree with you here.
Now I'm left wondering (a) how much of Ransom's scheme was taken from / inspired by Harlan's various stories, and (b) what other murder mystery tropes the sequels might play on, like this did with the Detective Patsy.
The second option is that Marta told the police before Blanc arrived.
She was surprised that Blanc even knew and the cops didn't seem to know. In fact, Elliot expressly stopped the interview since Blanc kept asking her questions that put her in a difficult spot (even refusing to speak set it off) as it was a violation of her rights against self-incrimination.

Blanc showed up a week after his death and a few days after the funeral, just to clarify.
To anyone who might draw the conclusion that the reason none of the other Thrombeys talked about it because none of them knew, Ransom knew about Marta's inability to lie from a 4th of July Mafia game. You don't play Mafia alone, and Ransom doesn't seem like the type to invite Marta to game night with friends, even if he wasn't openly nasty to the workers in the Thrombey house.
Edit: qualified the statement at the beginning. A writer at GameRant seems to think none of the other Thrombeys knew.
I mean, doesn’t he confirm it by tapping the nurse’s shoe at the end where the evidence was? He was just in this getting the proof he needed for what he already knew.
That interpretation doesn't necessarily conflict with OP's.
Marta and Ransom were both trying to kill Harlan. Marta wanted to make it look like suicide (because she heard about the new will). Ransom was trying to frame Marta (so she couldn't inherit).
Ransom sent the letter to Blanc. OP's analysis of Blanc's perspective is correct. And, as OP explained, that letter helped Marta's cause (by making Blanc less suspicious of her lies).
