Kahlua Coffee Ice Cream

Ingredients

1-1/2 cups whole milk, chilled …
1-1/8 cups granulated sugar
3-5 tablespoons instant espresso powder (to taste)
1 Tablespoon Kahlua
3 cups heavy cream
1 teaspoon pure vanilla extract

Instructions

In a medium mixing bowl, use a hand mixer on low speed to combine the milk, granulated sugar and espresso powder until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream and extracts.
Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes. Add the kahlua to the mix in the last five minutes of freezing. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

Gluten Free Sourdough Bread (Rice Flour) The night before you plan on baking 1 tsp/5 gof cold starter 10 g brown rice flour (5%) 10 g of water (5%) … In a glass jar, mix your cold refrigerated starter with the water, add the rice flour and blend until smooth. Cover with a cotton cloth and leave at room temperature. First Dough 20 g of starter (10%) 100 g of brown rice flour (50%) 100 g of water (50%) In a large bowl, first stir the starter and water, then add the flour and blend until smooth. Cover with a cotton cloth and leave at room temperature. There is very little of the starter, so the activation takes a bit more time – at least 4-5 hours at 20°C. Cooler temperatures will require more time. 20 g of Psyllium Husk (10%) 200 g of water (100%) In a separate container dissolve the Psyllium husk in water and wait until the mixture is ready. Preparation and letting the dough rest 100 g brown rice flour (50%) Mix the dough from the first step and Psyllium Husk, stirring until smooth. Next add the rice flour and stir until smooth. From a very happy customer! I absolutely love the WP Gluten Free Muffin mix and have bought it by the kg since the store opened! It absolutely never fails and … I have used so many different additions to keep things interesting for my Coeliac son. I particularly like that I can make the appropriate sized batch and there is no wastage. I’ve tried a full, half and quarter sized batch and it still works every time regardless of which additions and which size egg you use. That is not always the case with GF foods! They are really handy for a last minute snack to take to someone’s house and they are not sickly sweet like some premixes can be. Here are the quantities for the smallest size batch - my son’s favourite, blueberry and coconut. 125g muffin mix 1 egg 38g coconut oil 38ml water Handful blueberries I rarely get my mixer out for muffins, it works just as well with a quick whisk. Bake about 22 mins at 170degrees (in my oven anyway!) Yields 3 large muffins!!
Other great additions are: Chocolate chip, Raspberry and white chocolate, any fresh or frozen berries, grated apple, vanilla, leftover fruit puree or apple sauce (add these before water to check consistency and reduce water if necessary), chopped dried fruit or swirl with strawberry ice cream topping. It’s even nice to just have them plain with just a light sprinkle of dark sugar on top. Most of our guests haven’t even realised they are gluten free.
