I'd like to share with you my long-time hobby (>2 years π): keeping kefir grains.
π My interest was sparked many years ago when my mom was making yogurt by herself. In Taiwan (2019-ish?) I finally gave it a try and managed to make yogurt from bought yogurt and milk. But the quality would vary a lot and after a few batches it would eventually fail.
π In 2020 my girlfriend got me some kefir grains and a kit (filter and wooden spoon) to make kefir yogurt with as a surprise gift.Β
π¨βπ¬ It was a lot of trial and error (finding the right milk, grain-to-milk ratio, fermentation time & conditions) but it was more stable than the yogurts and I've managed to keep them alive and propagating. π
π I eventually also introduced and bought my mom kefir grains. I actually ended up taking some of her kefir grains, because mine very tiny and didn't grow in size. But the ones my mom had were bigger chunks and would grow in size.
πNow I've managed to simplify the filtering process and make new Kefir yogurt every day. I have it as a yogurt drink (mixed with salt and water), with oats and nuts as a bigger breakfast or when I've done a second fermentation with fruits just as a flavoured yogurt snack.
π¦ Besides the different taste (which can still vary from batch to batch), Kefir also contains a lot more pro-biotic bacteria than yogurt, which can benefit your gut flora.
So if you're a fan of yogurt and want to try something new, I'd recommend finding some Kefir grains and making Kefir yogurt. (Sometimes people give them out for free, since they grow and increase constantly.)
