Shediac (official in both languages; Shédiac is colloquial French) is a town in Westmorland County, New Brunswick known as the "Lobster Capital of the World". It hosts an annual festival every July which promotes its ties to lobster fishing. At the western entrance to the town is a 90-ton sculpture called The World's Largest Lobster. It is believed that chiac, a well-known Acadian French patois, was named after Shediac. Since its founding it has expanded several times, most recently in 2023, when it annexed all or part of four local service districts. Revised census figures have not been released.

Pascal Poirier (February 15, 1852 – September 25, 1933) was a Canadian author, lawyer, and the all-time longest-serving Senator. Born in Shediac, New Brunswick, in a big family, he attended College Saint Joseph in Memramcook, New Brunswick. At an early age he wrote a book on the Origin of Acadians, a history that contradicted myths of the time. He also wrote multiple articles and a glossary of the Acadian French language. After finishing school at the College Saint-Joseph in Memramcook during 1872, Poirier was appointed Postmaster of the Dominion Parliament at age 20. He held that position until he was appointed to the Senate thirteen years later. Poirier was the first Acadian appointed to the Senate of Canada. He was appointed in 1885 and served for 48 years, 6 months, and 17 days until his death in 1933. The Constitution of Canada requires new senators to be at least 30 years old, and senators appointed since 1965 are required to retire from the Senate at age 75. This means that current Senate rules impose an eligibility limit of 45 years so that Poirier's record can not be exceeded. The Pascal Poirier House (built c. 1820–30) was designated a Provincial Historic Site under the Historic Sites Protection Act. The home he was born in has been preserved as a museum and as an important and rare example of early-19th-century Acadian residential construction. The 1+1⁄2-storey gabled house, which features a hand-hewn structure, is believed to be the oldest building in Shediac. He was honored as a Chevalier de la Légion d'Honneur by France in 1902. In 1954 he was declared a Person of National Historic Significance as part of the Acadian Men of Letters. Their plaque is located in Shediac.

University of St. Joseph's College
The University of St. Joseph's College was the leading Acadian cultural institution, an Acadian Catholic university in Memramcook, New Brunswick that closed in 1966, when it was amalgamated with two other Catholic Acadian colleges to form the secular Université de Moncton. The process of amalgamation excluded a full reflection of the founding Catholic Culture of the Acadian people, fostering a secularization of Acadian life. The Collège Saint-Joseph, the Université Sacré-Cœur in Bathurst, and the Université Saint-Louis d'Edmundston suspend their respective charters and assume the status of affiliated colleges (Collège Saint-Joseph, Collège de Bathurst, and Collège Saint-Louis) in the secular Université de Moncton, named after the city of Moncton, which in turn was named after General Robert Monckton the British General who directed the Acadian deportation. Founded in 1864 as St. Joseph's College on the site of St. Thomas Seminary which had closed two years earlier, St. Joseph's was the first French-language, degree-granting college in Atlantic Canada. The university was closed in the 1960s with the establishment of the University of Moncton. The university facilities now house the Memramcook Institute, now properly called the Memramcook Learning and Vacation Resort. There is a national historic site, Monument Lefebvre, located on the Institute grounds that features exhibits about Acadian History. In 1898 the college obtained the status of a university and became the University of St. Joseph's College. In 1928 the title was shortened to University Saint-Joseph. By 1920, the university had two faculties: Arts and Sciences. It awarded the degrees of Bachelor of Arts (BA), Bachelor of Science (BS), Bachelor of Law (BL), and Master of Arts (MA). It had 389 students and 40 academic staff, all male.

Joseph Poirier (New Brunswick politician)
Joseph Poirier (1840 – 1914) was a merchant and political figure of Acadian descent in New Brunswick, Canada. He represented Gloucester County in the Legislative Assembly of New Brunswick from 1890 to 1892 and from 1899 to 1908 as a Conservative. He was born in Grand Anse, New Brunswick, the son of Hubert Poirier. Poirier established himself as a merchant there and, in 1882, entered the lobster packing industry. He also was involved in the export of salmon. In 1860, he married Emelia Theriault. Poirier served as a member of the county council and was county warden. He was also a director of the Caraquet Railway.

Jim Quinn (New Brunswick politician)
James Quinn (born January 25, 1957) is a Canadian Senator from New Brunswick. He was appointed to the Senate of Canada on June 22, 2021, by Governor General Richard Wagner on the advice of prime minister Justin Trudeau. Quinn is a graduate of Dalhousie University (BSc) and holds the professional designation of Certified Management Accountant (CMA) – Certified Public Accountant (CPA). He was previously the president and CEO of Saint John Port Authority and brought over 30 years of experience in the marine and public sectors to Port Saint John, where he began his career on Coast Guard (CG) ships and oil tanker ships, in 1973. In 1981, he rejoined the CG and in 1982, he moved to the CG headquarters in Ottawa, where he was promoted to leadership positions including Regional Director of the Central and Arctic Region and Director General, Marine Programs. After 23 years with the Coast Guard, Quinn joined the Privy Council Office’s Machinery of Government Secretariat and Social Development Policy Secretariat as a senior advisor. In 2002, he joined Indian and Northern Affairs Canada as Director General of Lands and was promoted through several leadership positions culminating in the Chief Financial Officer/Assistant Deputy Minister role. Quinn also held the position of Chief Financial Officer at the Canadian International Development Agency before leaving government to work at Port Saint John. He also serves as Honorary Lieutenant Colonel for the 3rd Field Artillery Regiment (The Loyal Company), 5th division army.
