DIRECTIONS In a large saucepan, bring water, sugar and alum to a boil and boil for 10 minutes. Take off heat. Rinse off blossoms in strainer and drain well (be sure not to leave any green parts on blossoms or honey will be wild or grassy tasting). Stir in blossoms and steep for 3 hours. Remove flowers, strain through cheesecloth if necessary. Reheat to a boil, then pour into jars and seal.

We used to use a similar recipe in Alaska, except we used 18 large (about 1 inch diameter)clover blossoms and 48 large red rose petals. We thought it was a fabulous recipe and handy where it was hard to get real honey. We also didn't steep it more than about an hour.
I followed instructions as they were given. Next time I would not boil syrup as long. Maybe it is because I was using a gas range. My kids loved it.
My Grandfather used to make homemade honey when i was a kid. I loved it more than bee honey as most everyone who tasted it. Gathering the fireweed and clover became a family outing I will always remember. After my grandparents passed away the recipe was lost, until now, thank you.
my sister and i have made this for years-try using oranges, or lemons for lemon honey. just experiment, its easy and alot of fun and Everybody wants some-great gifts. no one will know its not the real honey.., we learned it as 'homesteaders honey'.
I have tried this same recipe in the past and for a nice twist, try adding some fresh blackberries to the steeping process. It adds a wonderful flavor and a great color. I recomend adding aprox. 1/3 cup of blackberries or other juicy fruit. Also bee sure to squeeze the cheesecloth when you strain the honey to get all the juice and flavor from the berries.
