1 кг
Мясного фарша домашнего (50% свинина+50% говядина)
10 листьев
Капусты желательно - молодой
150 г
Сала
1 шт
Яиц
1 шт
Лука репчатого
150 мл
Сливок или молока
3 зубчика
Чеснока
50 г
Орехов грецких
1 пучок
Петрушки или базилика
150 г
Сыра сливочного (соус)
190 мл
Сливок (соус)
70 г
Масла сливочного соус)
Соли по вкусу
Перца черного молотого по вкусу
Помидоров для украшения
Масла растительного для смазки противня
Огурцов для украшения
Зелени для украшения
Подготовим капустные листья так, как показано на видео выше или отварив их в подсоленой воде.
В глубокой миске соединяем: фарш, мелко нарезанное сало, измельченные чеснок и петрушку (базилик), нашинкованный лук, растертые в ступке орехи. Добавляем сливки, соль, перец. Тщательно вымешиваем.
Противень смазываем маслом. Выкладываем три капустных листа в ряд. На них - фарш, сформировав "колбаску". Сверху закрываем оставшимися листьями. Отправляем в духовку примерно на час.
Пока запекается наш Голубец, подготовим соус для обмазки: на паровой бане разогреваем сливки. Добавляем к ним масло и (через минуту) натертый на крупной терке сыр. Помешивая, доводим до загустения.
Через час достаем рулет из духовки и обмазываем его со всех сторон соусом. Отправляем обратно запекаться ещё минут 20-25, до образования красивой аппетитной корочки.
По истечении времени, выкладываем наш Голубец на сервировочное блюдо, украшаем зеленью, помидором, огурцом и подаем к столу. Приятного аппетита!
