Kind of the entire point behind this board's existence, talk about that which makes you the fanservice fanboy you are. 
Are there any alternatives to danbooru/gelbooru? These sites are rather annoying in how, for example, specific moderators will go out and delete images based on breast size, even though the rough(and poorly defined) standard size before deletion is much larger. Its fine to have rules, but when rules arent consistent and mods are dicks and dont care that other mods enforce their own, different rules, its awfully obnoxious. Additionally, it'd be nice if there was simply a booru that didnt care about breast size.(Though, deleting images because they're poorly drawn in some way is fine, i just dont like when things are deleted based on content as opposed to quality, especially when there's no advertiser issue in that regard)

Yeah I stopped going to those two sites a long time ago because of the overabundance of boob-hating, loli-loving pedophiles that go there. I ususally just use g.e-hentai.org. You can find a lot of good bakunyuu stuff there.

You can always visit the place in my signature, be advised tho that even tho we try to post much material, I'm afraid we aren't too intensive (however not even Gelbooru was...) An underscore is used for spaces within a tag, example: red_hair
A space seperates each tag, some image boards limit how many tags you can use at once however

I'm looking for something where I can catalogue my image collection. I'm contemplating setting up a booru instance (e.g. Danbooru, Gelbooru v0.1, Shimmie2, Szurubooru). I'm not sure which one I should choose though.
Poking u/HoboGoblin and u/BigsyJelly for advice, since you guys seem to have experience on this topic.
So far they have all been a major pain to install and szurubooru was the only one I was able to install. Although I ended up not liking it much. The installation wasn't anything like the GitHub readme said and I did a lot of troubleshooting to get it up and running.
In the end it didn't really do what I wanted either. Szurubooru is quite possible the only booru out there that will not work with a single Android booru app or PC booru browser/viewer. This means that you are stuck with the web interface which is not well formatted for mobile (click and image and you have to scroll down about 1.5 inches to actually see it on the new page that loads).
I'd recommend getting a "standard" booru to work if you can or just give in to apathy like I did and load everything into Plex sorted by folder.
I'd still like to go back to a booru model one day because tagging is the single best feature for photos. But the unfortunate truth is that the self hosted / FOSS community has almost no good photo solution.
r/selfhosted is littered with desperate requests for a good self hosted photo solution and a lot of those requests are probably by me. One day maybe we'll get/develop one. If you can get danbooru working hit me up with how because their guide is not even a guide really and every attempt I've made so far failed.
But whatever you go with, if it's a booru, make sure it is compatible with mobile apps/PC clients first because just using the web interface is almost always going to be terrible.

Out of all the options you listed, Szurubooru is the best option you can try since you only need docker. Danbooru has a installation wiki here for running a development instance but the last time I tried it, some features doesn't work (e.g. turning someone an admin, pools). I wouldn't recommend Gelbooru v0.1 as it is too old and probably plague with security issues. Shimmie2 works fine but for me, I wouldn't use this because of it's messy codebase.
Hydrus works really well and you won't have to go through any installation hell plus it also has a portable ver. You can pair it up with Hyve if you want the web interface but I have yet to try it myself.
I ruled that option out early on. It doesn't have a webUI. The client is an application.
Hyrus honestly sucks. I tried to like it, but it's a really difficult thing to do.
Can you please update this post with whatever you decide? I never thought about self hosting a booru for internal use and organizing my considerable image and video collection that’d I’d like to keep out of Plex.

Sure. You might have to have to wait a couple of months though. I plan to run the service on a 8gb raspberry pi 4. This might cause more complications 🙃
So far the two most attractive solutions are Hydrus with Hyve, or Danbooru. The latter is possible, just painful. I've seen some masochistic adherents using the GitHub issue tracker as a support forum.
