THE 2006
ACT OF CREATION
2006 was climatically irregular and, taken as a whole, hot and dry.
The cellar-based ripening of the 2006 vintage was very slow. For a long time, the wine was largely dominated solely by the fruit's ripeness. It was not until 2015 that the comprehensiveness and harmony of its first plénitude was finally revealed.
Dom Pérignon 2006 is superlative, luminous and glorious. Its original generosity - ample and tactile - is enhanced by a clear structure that gives it freshness and precision.
ON THE NOSE
The immediate impression is of the mildness of the pure, airy, bright bouquet. A floral, fruity pastel tone then unfolds and quickly darkens into candied fruit, ripe hay and toasted notes, along with hints of licorice.
ON THE PALATE
The wineâs opulence â contained and succulent, round at heart â reveals itself on the palate. The envelope slides and stretches, and the wine becomes more complex and edgy, silkier than it is creamy. The whole eventually melts into an exquisite bitterness tinged with the briny taste of the sea.
FOOD PAIRING
Sicilian olive oil embraces the incomparable sensual note of Dom Pérignon. When the wine makes contact with this low acidity, brilliance, and unctuous substance, it reveals Dom Pérignon Vintage 2006's silky curves, seamless voluptuousness and creaminess, brightened by vegetal notes.
Technically my most challenging Vintage was 2006. I keep referring to risk at Dom PĂ©rignon, to step outside one's comfort zone: to me it's the essence - an element of magic comes out of it.

2010. Winter was rigorous, spring dry and late. After a particularly sunny decade, such freshness was surprising. Summer was hot, but not excessively so. Then, two days of diluvian rain brought this ideal trajectory to a halt. In just a few days, botrytis mold developed on the grapes, mainly on the pinot noir.
This triggered a race against the clock. The grapes were not yet fully mature, but a decision had to be made quickly. Dom PĂ©rignon deployed its full resources to trace a precise map delimiting the maturity and health of each parcel in its vineyards. Every minute counted.
This expert vision of the situation gave the possibility of saving excellent plots of pinot noir grapes. The challenge was met, Dom PĂ©rignon declared a vintage quite literally âsaved from the watersâ: Dom PĂ©rignon Vintage 2010, fruit of intuition and mastery.
The luminous sweetness of tropical fruit â green mango, melon, pineapple â instantly shines. It then cedes to more temperate notes, the tingle of orange zest, the mist of a mandarin orange. The wine breathes, revealing its freshness. The bloom after the rain. A tactile sensation of peony, jasmine and lilac.
The wine immediately imposes its ample presence, full and massive. A sappy sensation dominates as the tactile is rapidly overtaken by the aromatic. The body unfolds: generous, firm and controlled. Then it contracts, letting the wine vibrate with spices and pepper. The energy is sustained to a scintillating, saline finish.

The stretch of excellent weather condition of 2009 was unprecedented, and allowed us to explore new frontiers of grape ripeness in Champagne. The vintage offers a taste of the ripest and richest fruit, grapes in their prime, with the promise of the future wine's freshness and energy. The 2009 vintage brings a prodigious, sunny, bold and generous decade to a close.Â
Notes of guava and spicy green grapefruit zest combine with stone fruit: white peach and nectarine. The wine opens up, with the whole complemented by woody vanilla and warm, lightly toasted brioche.
The fruit is majestic: ripe, fleshy and profound. Beyond the richness and a certain voluptuousness is a strong impression of consistency that prevails. The wineâs power is remarkably restrained. The various sensations â silky, salty, sappy, bitter and briny â converge and persist.
Dom PĂ©rignon Vintage 2009 is a wine that needs to be excited. It needs a framework, it appeals to be stretched with contrasts.Â
The champagne reaches out to the "vegetable" and "mineral" worlds, calling out by sea urchin carbonara with cardamom mousse. It works brilliantly when it has something to chew on: octopus marinated in Sicilian orange juice and roasted in butter.

The nose is full and varied, mingling flowers with fruit, and the vegetal with the mineral. The bouquet is tactile, subtly enticing us along a trail of powdery white flowers and nectareous apricot, followed by the freshness of rhubarb and mint and the minerality of ash. White pepper.
