Gravity Falls features several queer characters, but even more seem to be queer-coded. Here are two fan-favorites to read as queer.
Disney's Gravity Falls presents a universe that's seemingly filled with queer characters, even though few are explicitly labeled as such. It's no surprise, then, that fans have begun to read some of them as LGBTQ. Two of the most heavily queer-coded are Dipper and Wendy, whose status as main characters would mark a significant step for representation in animated television.
Some fans interpret Dipper Pines as a trans boy. He and his sister Mabel appear to be identical twins, which would lend credence to the theory they were assigned the same sex at birth. However, this evidence is thin in comparison to other hints throughout Gravity Falls that Dipper is trans masculine. (It seems more likely that Dipper and Mabel are based on creator Alex Hirsch and his fraternal twin sister, Ariel.)
The show focuses on Dipper's relationship with masculinity in a number of different episodes. One in particular grapples explicitly with Dipper's quest to appear more like the cisheteronormative, binary ideal of a man, as taught by the mythical "manotaurs." He wants to grow chest hair, gain muscle and have a deeper, gruffer voice. That is a pressure many trans men feel in order to "pass" as men in society. By the end of the episode, Dipper realizes there is no "right" way to be a man, which is a gender-critical approach to identity that further supports the theory that he is trans.
Fans often point to Dipper wearing a T-shirt to the pool, an action also common for AFAB people who want to hide their chests. He also uses a nickname throughout the show, suggesting he relies on a chosen name rather than letting the Gravity Falls community deadname him.
Wendy Corduory, Mystery Shack employee and ax-wielder, is another fan favorite to read as queer-coded. Although Wendy dates boys on the show, that hasn't prevented fans from viewing her as bi, pan or even lesbian. Many are quick to point out that Wendy is young, so experimenting with boys could be a stage, and doesn't rule out the possibility of her being a lesbian.
Part of what fans read as queer about Wendy is her tomboy aesthetic. A lot of her actions are influenced by her upbringing in a family of men, from her single dad to her three younger brothers. While it can be problematic to read stereotypical male behavior as indicative of sexual orientation, it certainly doesn't rule out that aspect of her identity.
Ultimately, it's Wendy's chill vibe and "cool in the face of danger" demeanor that sells her queer identity. If anyone on Gravity Falls would be fine with accepting fluid sexuality, it would be Wendy. Even Hirsch sees that as a possibility, confirming on Twitter that Wendy could be lesbian or bi.
With a confirmed gay policemen, as well as a statement from the creator saying he had intended for more LGBTQ representation but was forbidden from doing so by Disney, there's a lot of room for reading other Gravity Falls characters as queer. More importantly, in a universe that's LGBTQ-inclusive, it makes sense that characters wouldn't always reference their own or others' sexuality or gender identity, especially while trying to save their world.

Dipper finds a suspicious Taco Bell in the forest and orders a taco, but before he can finish it, he gets diarrhea and goes to the bathroom. However, he gets aroused by his various bodily fluids and begins masturbating. In the process, he accidentally bites off his own penis and dies. Mabel finds his corpse in the bathroom and violates it, but a Taco Bell employee dismembers her alive before killing her with a stab to the heart and using the knife to do some generally awful things to her. The story ends with Soos coming to buy a taco, and the implication is that the tacos are made of human meat. There. You've been warned.

Dipper needs to get a release at once, but doing so is so incredibly hard, when his sister is around him all the time. After he has an (un?)fortunate encounter with a creature from outside of his world, he decides he might as well do it with his sister instead.
