This recipe for chickpea balls is quick and easy, it is prepared with cooked chickpeas and you can also use pre-cooked chickpeas in a jar . These meatballs with chickpeas are an excellent vegetarian second course but also a nice idea for a tasty aperitif. INGREDIENTS
COOKED CHICKPEAS 2 jars
ONION 1 small
LOAF OF BREAD 4 slices
BREAD CRUMBS 6 tbsp + for breading
EGG 2
GRATED CHEESE 2 tbsp
SALT to taste
PEPPER to taste
ROSEMARY OR PARSLEY to taste
PEANUT OIL FOR FRYING to taste
PREPARATION
Start preparing the chickpea meatballs recipe by draining the legumes from the liquid in which they are immersed in the cans, put them in a mixer together with the slices of sandwich bread , the cleaned and washed onion , the parsley (or rosemary). Run the mixer to chop everything finely.
Pour the mixture into a bowl, add an egg , season with salt and pepper and mix. Also add the breadcrumbs and grated cheese . In this way you will have obtained a firm and well-mixed dough.
At this point form chickpea balls with the help of a spoon, make them all the same size so that cooking will be uniform.
In a plate, shell the remaining egg and beat it lightly, in another plate pour plenty of breadcrumbs. Now dip the prepared meatballs first in the egg and then in the breadcrumbs, rolling them well so that they are perfectly breaded.
Decide whether to cook chickpea balls in the oven or fried . For frying , put plenty of oil to heat and when it has reached the temperature, dip the meatballs, they must be completely covered in order to obtain a crispy cooking. As soon as they brown, remove the meatballs from the heat and let them dry on absorbent paper before serving.
On the other hand, for cooking in the oven, place the chickpea balls on a baking tray lined with a sheet of baking paper, sprinkle them with a drizzle of oil and place in a hot oven at 180° (preferably ventilated) for about 20 minutes, possibly turning to half cooked.
