Traffic would be hectic but somehow they all manage to miss each other despite the lack of lanes and traffic lights, starting and stopping to buy their daily fruits and baguette sandwiches. Students linger about a snack seller and munch on deep fried everythings, and stray dogs patrol the streets with determination, as if on secret missions unknown to the human-kind. At night, the selling activities continue, with the same people on the way home purchasing grilled fish and meats, and last minute fresh groceries from the street side stalls. Outside this part of the city can get somewhat eerie. The old train station, built by the French and since abandoned, is now an empty building where the time is frozen to The railway tracks are over grown by weed and the old station ground now a makeshift volleyball court for the tuk tuk drivers on a break. Strolling along the streets I noticed the distinctive French style architecture on runned down building and crumbling walls, but further along nearer to government administrative buildings are restored mansions and beautifully painted street lamp posts. The city oozes contrast between the common folk and those with power combined with the air of a colonial past. So Asia is kind of a dream come true for my taste buds. Nicole, my traveling buddy for Cambodia, is as equally as nerdy as I am, so when we were in Battambang on her birthday we decided to take a cooking class. Around 9AM on that beautiful Tuesday morning, our chariot picked us up from our hostel. And by chariot I mean little cart pulled by a motorcycle. Cambodia is so quaint. Our first stop was the local market. For our 3-course meal we decided to cook Khmer Fish Amok, Lemongrass chicken, and sweet potatoes in coconut milk for dessert. We arrived at his house and was kind of a rural shack. His mother was helping out with the cooking, cleaning, and prep; and his cats were scurrying around our feet. We took a scoop of shredded coconut and put it into a cheesecloth. Then we simply rolled it like a piece of candy, squeezed, and out came coconut cream! I also learned that the difference between coconut milk and coconut cream is that coconut cream is more concentrated, whereas coconut milk is watered down a little bit. Using a mortar and pestle, add the lemongrass, galangal, garlic, and turmeric. Ground up finely, the paste should turn a yellow color. Add the minced up chilies. Pound some more. Add the curry paste to the coconut milk. Cut the mushrooms into whatever size you like halved for me , and add them as well. Add the fish sauce, palm sugar, salt, and mix. Our instructor told us to pull it against the side of the bowl with the back of our spoons to mix it in, which was helpful. Add the cubes of fish, pour into the banana leaf cups or cooking dish and put in a steamer. We cooked ours in a traditional coal steamer for 30 minutes. At the end of our meal we sat down with our instructor while we ate. Then the conversation turned somewhere else — into yet another pity shpiel spelling?
