A highball is composed of an alcoholic spirit and balanced by a non-alcoholic mixer. The core of a highball can be split between spirits, wines or fortified wines.

No good story started with a salad. We love mixing drinks and finding new pairings. Below we have featured a selection of the cocktails we are drinking right now, as well as our perfect serves that we pour with a few of our favourite distillers.
We will change our drinks lists with the seasons and so do check back. If you would like to tell us about a cocktail idea or order a menu for your bar, then please get in touch .
The classic highball. Simply build in a glass using your preferred whisky. We are enjoying the Teaninich Highland Whisky at the moment.
To serve: use a chilled glass filled with large ice cubes, measure in the whisky and give it a stir, then top with soda, give it another quick stir. Lemon garnish optional.
50ml of your favouite Mezcal, 20ml fresh grapefruit juice, 150ml Navas Original Tonic.
Our take on the famous Paloma Cocktail. We like to use fresh pink grapefruit.
To serve: build ingredients in a chilled double rocks glass filled with ice, give it a quick stir and garnish with grapefuit slice and a sprig of rosemary.
One of our favourite simple highballs. Build in a glass using your prefered Rye Whisky.
To serve: use a chilled glass filled with large ice cubes, measure in the whisky and give it a stir, then top with ginger ale, give it another quick stir. To garnish use a twist of lime peel or wedge if you like a bit more citrus.
50ml Blanco Tequila, 150ml of Navas Original Tonic.
We love our tequila and its a great alternative to a G&T.
To make measure in the tequila over ice, top with tonic and garnish with citrus. Either a lime or lemon and we also love to add either marsh samphire (for the salt) of lemon verbena.
50ml Knightor Rosé Vermouth, 2 dashes of Rhubarb Bitters, 150ml of Navas Light Tonic
A refreshing summer spritz that can be made with any rose vermouth, but we love Knightor’s range.
Build-in glass over ice. Measure in vermouth, dash in bitters, stir gently then top with tonic. Garnish with orange slice and mint.
50ml Dry Vermouth, 150ml Navas Original Tonic
A refreshing and low alcohol drink perfect for warmer weather or pairing with a fish dish. The seaweed garnish adds wonderful depth to this glass.
Measure in the vermouth over ice, top with Navas Original Tonic and then garnish with dried kombu seaweed and a slice of lemon. Use the dried seaweed to gently stir and then enjoy!
