Process for new prepared food vendor requests Prepared Food vendors joining the market are required to use only natural ingredients (preferably organic) with no artificial colorings, flavorings, hydrogenated fats or high fructose corn syrup. Process for a new prepared food vendor: Pay $25 application fee online here – Must be paid before TFM will consider your application or discuss details surrounding your application. Each truck provides tables and chairs, and a waitress will usually take your order. Rio Grande Valley Citrus Vendors sell bags full of local grapefruits and oranges. We chose a truck bustling with diners and ordered gorditas—thick, deep fried dough filled with white cheese and topped with lettuce, tomato, avocado, cotija cheese, and crema. The flea market is great place to find deals on tropical fruits like guava, soursop, mango, and papaya. There are several ice cream vendors pushing their carts through the market. The most popular paleta flavor was rompope, or Mexican egg nog. It seems like every stall sold a different selection of brightly colored aguas frescas ladled from large clear jars. Strangely, I only saw one snow cone stand in the market. This coconut nieve was as smooth as snow and dotted with flecks of real coconut. You could probably outfit an entire kitchen with purchases from the market. It's a great place to find mortar and pestles and tortilla presses.
