Beer Garden-Style Red Cabbage and Sausage This dish is the culinary national obsession in Munich's beer gardens. We had the best version of this meal one day at the Englischer Garten, where the Chinesischer Turm (Chinese Tower) sits. There is a beer garden there that you should definitely check out. This recipe serves 8. 3 lbs. heads of red cabbage, cored and shredded/sliced thin 1 fresh beet, diced 3 lbs. mixed sausages: Knockwurst, Weisswurst, Bockwurst, etc. 4 apples, Haralsons work well 3 cups dry red wine 1/4 cup butter, plus 2 tbs. for the sausages 1/2 cup red wine vinegar 1 tbs. pickling spices 4 tbs. parsley, minced. Hold back a teaspoon for garnish. 4 tbs. minced dill. Clean, cut out the core and slice cabbage thin. Peel, cut out the core and slice apples. Discard peels and cores. Melt the butter over high heat in a large pot. Add the onions and sugar. Cook until lightly caramelized. Add the cabbage and cook for 5 minutes.




Add the vinegar and stir. Cook for a few minutes longer. Add the red wine and all the herbs and spices. Cover and reduce heat to low after mixture comes to a boil. Cook for 70 minutes. Lightly brown the sausages in the 2 tbs. of butter 10 minutes before serving. Remove lid from cabbage. Cook for a few minutes and pile sausages on top, cooking cabbage for 5-10 minutes more to reduce the juices. The simmering will keep the sausages warm. Serve with pretzel bread and plenty of strong Bavarian mustard. After you arrive in Chico, CA you spend the first night with your group members socializing and drinking late into the early morning. Early next morning you get an all access VIP tour of the amazing Sierra Nevada Brewery.




Your VIP tour includes inspection of Sierra Nevada’s bottling/canning line, pedaling across the Sierra Nevada property on a beer bike, examining the science behind Sierra Nevada’s quality consistent beers, tasting beers that have yet to be released or are only available in Chico, CA, and freezing your butt off in a huge freezer full of hops that literally reach the ceiling. These are just some of the perks you’ll enjoy while at Beer Camp. You and your group will also build out your recipe for the beer you’ll brew the next morning. Sierra Nevada Beer Bike Since you’re at Beer Camp, the beer flows like water! If Sierra Nevada brewed it, you get to drink it, on the house for free. Your meals are also complimentary as are the Narwhal floats! Once your group has a beer recipe made up and you’ve toured the amazing facility, you and your group get to brew your beer on Sierra Nevada’s pilot brewing system. We milled our grains, added our hops and named our beer; their advanced brewing system the rest.




We named our Hoppy Honey Rye Ale, Rye-Way 117. Highway 117 just happens to run through North Carolina, the site of Sierra Nevada’s new brewery, and since we were beer camp group #117 the name just made sense. We used rye and English malts for our grain bill, Chinook and Centennial hops, and 120 pounds of local honey for an added touch of aroma and balance. Look for the release of this beer in the spring of 2014. Once your beer is ready for distribution, you get to choose a location to tap your beer at to share with your friends and family. Not only do you get to have a public tapping for your beer, but Sierra Nevada will also allow you to buy a 5-gallon keg from them, for which they will ship to you. Being VIP guests, we were also allowed to pack Ziploc bags full of whole coned hops to take home and shop in their gift shop with our employee discounts. These were just a few of the added party favors to remember our Beer Camp experience better. Beer Camp was an amazing once in a lifetime experience.




You’ll meet some awesome new brewing and drinking buddies, have some new material to add to your resume, and will always be able to say to your friends and family, “I went to Sierra Nevada’s Beer Camp and it was awesome!” However, before you can do any of this, you need to enter the contest first! Guest post by Aaron Beaulieu. It all started years ago when my youthful lips first encountered the taste of a delicious craft beer. Fast-forward to 2012 when my brewing partner and friend, John Lovegrove, entered a contest for Sierra Nevada’s Beer camp. John ended up winning a spot and brewed Bloodshot; an Imperial Red Ale that was featured in Sierra Nevada’s Beer Camp variety packs this past summer. I had never heard of the Beer Camp competition until John submitted his video. John convinced me to submit my own video, so when the contest rolled around again this year, I decided to give it a shot. So what is Beer Camp? Beer Camp is similar to most camps e.g. summer camp, space camp, etc., in that you're doing activities related to the camp name, however this camp is setup by the legendary Sierra Nevada Brewing.




With the addition of hops, malts, delicious beers, awesome people and Sierra Nevada’s brewery practically at your hands, it’s much better than any other camp out there. We've had the pleasure of conversing with Aaron for a while via the Twitters, but when we found out he had earned a chance to go to Sierra Nevada Beer Camp, we decided everyone should learn more about this home brewer.
