Cool until handleable and slip off the paper husks. One by one, drop the garlic cloves into a running blender or food processor, letting each get thoroughly chopped before adding the next.
Stop the machine, remove the lid and add the remaining marinade ingredients along with ½ tsp. salt and process until smooth. Scrape half of the mixture into a medium-size bowl. Add the chicken and stir (or toss with your hands) to coat evenly. Scrape the remaining spice mixture into a small saucepan. Add the broth and ¼ tsp. of salt, depending on the saltiness of the broth. Heat one side of a gas grill to medium, the other side to medium-low. Or light a charcoal fire and let it burn until the charcoal is covered with white ash (and about medium hot); bank the coals to one side. Lay the chicken pieces on the grill over the medium-hot fire, skin-side down. When richly browned, usually 5 or 6 minutes, use a pair of tongs to flip them over onto the cooler side of the grill. Cook until completely tender at the bone (the juices will run clear when a fork pierces the thickest part)-expect about 10 minutes longer, maybe more if the breasts are large. While the chicken is cooking prepare the vegetables: In summer, arrange the sliced tomatoes slightly overlapping on 4 dinner plates and sprinkle with salt.
In fall, scoop the sliced zucchini into a microwaveable bowl, toss with a good sprinkling of salt, cover with plastic wrap, poke a couple of holes in the top and microwave until crisp-tender, about 3 minutes. In winter, scoop the sliced potatoes or beets into a microwaveable bowl, toss with a good sprinkling of salt, sprinkle with about a tbsp. of water, cover with plastic wrap, poke a couple of holes in top and microwave until tender, about 6 minutes. In spring, scoop the asparagus into a microwaveable bowl, sprinkle with about a tbsp. of water, cover with plastic wrap, poke a couple of holes in the top, microwave until crisp-tender, about 4 minutes, then pour off all the water and toss with a good sprinkling of salt. Arrange a portion of the fall, winter or spring vegetables as a bed on each of four dinner plates. Bring the broth mixture to a boil; taste and season with salt if necessary. Top the vegetables on each plate with a portion of chicken. Douse with a qt.er of the broth mixture and carry to the table.

Break the stems off the chiles, cut them in half lengthwise and lay them, cut-side down, on a baking sheet. Sprinkle the garlic cloves among the chiles. Slide under the broiler and roast until the chiles are soft and blotchy black in places, about a minute or two. Scrape into ablender or food processor and add the lime juice and ¼ cup water.
Process until nearly smooth. Pour into a salsa dish and thin with a little additional water if necessary to give the salsa an easily spoonable consistency.
