Yirgacheffe is a reference to "garden of flowers" (in the local Guji dialect) and the coffee from southern Ethiopia is prized because of its delicate scent. It is also renowned for its silky smooth finish that's more refined than most other coffees from the country. The coffee plant is situated at an elevation between 1,700 and 2,200 meters The coffee beans that come from this region are usually considered to be high-grown and are classified as Strictly High Grade (SHG). The elevation of the plant allows it to mature more slowly, which results in a more distinct flavor.
Ethiopian coffee is typically processed wet using coffee beans submerged in huge vessels of water until all the wine-like mucilage is removed. This isn't as popular in Latin America, but it's the process that creates the famous washed Yirgacheffe cup.
For the finest Yirgacheffe coffee, look for a light roast that highlights the acidity of the coffee's lemon. Its purity makes it an excellent arabica coffee for espresso. The fruity flavor of the coffee will remain even after the roast is dark. Pour-over brewers are excellent way to taste the taste of Ethiopian Yrigacheffe.

3. Jamaican Blue Mountain
A truly unique and scarce coffee, Jamaican Blue Mountain is a single origin, premium arabica coffee produced exclusively in the Blue Mountains region of Jamaica. The beans are famous for their mild flavor and lack bitterness. The beans are used to make blends of coffee and are the basis of Tia Maria - a popular coffee liquor. The beans are also the main ingredient in Blue Moon, a coffee-flavored ice cream.
The unique growing conditions in the region contribute to the beans' high quality. The hills are steep and rugged, which makes cultivation difficult. The soil is rich in mineral content and there is a continuous fog in the area. The fog is crucial because it helps to slow down the maturation of the coffee berries. In addition the weather is cool and cloudy which helps prevent scorching heat that would damage the coffee plants.
Another reason for the high-quality beans is the fact that they are harvested by hand, a labor-intensive process. Only a handful of farmers are allowed to cultivate Blue Mountain coffee and must adhere to strict requirements. To be labelled as Blue Mountain coffee, a cup must be sourced from a parish and be picked at an elevation.
Due to its exceptional flavor, quality and reputation, Jamaican Blue Mountain coffee is very expensive. Due to the high cost, counterfeiters have tried to disguise their products as authentic. To combat these phonies, there are now systems in place to confirm that the coffee you drink is authentically from the Blue Mountains. The certification systems also focus on ethical sourcing, such as fair wages for farmers and sustainable farming practices. This is an important step in protecting this top-quality coffee.
