Book description
The full-size, beautifully photographed book begins with a foreword by noted Paleo expert Diane Sanfilippo and then explains health stewardship and a history of fermentation. Part I gives fermentation basics and mother recipes with information on what foods to select, water, sugar and salt requirements and so on. In this section are recipes for dairy and coconut-based ferments including several kinds of yogurts and kefir. I particularly like the Greek-style yogurt (p. 91) which starts much the same as any homemade yogurt but is strained through cheesecloth to make it thicker. I plan to make the Mesophilic yogurt (p. 93) as soon as my order of mesophilic starter arrives. This yogurt has an entirely different bacteria in the ferment and is predominately of Scandinavian origin.Vinegars are covered with recipes for basic red and white, plus apple cider and a variety of shrubs—vinegar-based beverages that date back to colonial days. Of the fermented beverages, there’s kombucha, kvass and water kefir (p.120). Since getting this book, I’ve regularly kept us supplied with water kefir, preferring the lemon ginger taste in place of the suggested fruit puree.Fermented meats are covered with corned beef and salumi.Part II: Four Seasons of Fermentation offers recipes for the appropriate season and has pages on the availability and seasonality of ingredients. As it is now summer, recipes of particular interest are the Fermented Salsa (p. 175) which resembles regular salsa but with the addition of whey and Fermented Curry Ketchup (p. 176). My heirloom garden tomatoes are nearly ready for harvest, so these will be wonderful—and useful—recipes to try.Fermented is well written, nicely laid out so recipes are easy to find. Color photos enhance each recipe and the directions are straight-forward. Notes offer tips on varying many of the recipes. In short, Ms. Ciciarelli offers a wide variety and shows us that almost any food crop can be made more healthful through fermentation. Put this book on your shelf.
