This book opened this reviewers eyes, so to speak, as one never imagined that there was so much variety in honey. Of course, when you think about it and rationalise it, it is fairly obvious, but unless you are a particular fan of honey you might be forgiven for just picking up whatever honey is cheapest from the store when you need honey for your cooking. This reviewer is guilty as charged.So this book presents a very detailed, yet lightly-written, look at the rich, diverse world of honey, considering over 30 variants of honey (that are available in the United States). The book still has a lot to offer for those who live further afield since this book is packaged full of knowledge. Unfortunately, for this reviewer who doesnt like flying insects, there are far too many very lifelike pictures of bees in close-up. One can admire the excellent photographs for sure even with a bit of a funny feeling in ones tummy! It probably didnt help to read that bee venom (stings) is used by some as a treatment therapy…This book is truly a celebration of honey! Whether it is an examination of how honey is made, how its taste is influenced or the darker side of honey (fraud and impurities) you cannot fail to find a LOT of interesting things you never knew unless, of course, you live and breath honey as the authors seem to do and even then…Consideration has even been given to the different tastes of honey, how different honey types can be paired with different foods and, of course, a few recipes that use this rather vital ingredient. It is a shame that there were not more recipes involving honey in this book. Compared to the mass of detail and comprehensiveness of every other chapter, the recipe section seemed rather short in comparison. The book should also include a glossary and index which, if it follows the rest of this book, will be very comprehensive, but this review copy did not feature this so no opinion may be given as to its completeness and thoroughness.This is a truly fascinating book even for someone who uses honey passively. Maybe it might even tempt the reader to be a little adventurous. It is rare that one finds a book like this which manages to transform a relative passive, disinteresting subject to a rather fascinating, enthralling, gripping read.
